Sunday's skillet breakfast turned out phenomenal. I followed the Kress plan and it went off without a hitch. Thanks buddy. The only change was that my wife LOVES over easy eggs so I added one to the top of hers (she likes the runny yolk).

Took about 20 minutes from the time I turned on the stove to when it was served. My toddler usually isn't a big breakfast eater and even she had seconds.

We have a new staple for Sunday breakfast!!

I need to join this skillet talk. Everyone in my family and some friends consider me a good cook. Growing up, my dad was a great cook and I always cooked with him and we'd watch tons of cooking shows together. Then, I did Publix Apron's meals for 3 years, so I gotta pretty good at cooking fish and steaks and just general cutting and all.

Anyway, the other day I somehow ended up reading a recipe for a quesadilla. Yeah, a freaking quesadilla, why even write a recipe? But I was intrigued, followed it, and now I'm hooked. The key is to put some oil in the skillet, and cook the tortilla on both sides before putting in any ingredients. It gets air bubbles and a couple brown spots, and then throw in your cheese and ingredients and cook for another minute or so on each side. It made a huge difference. I made one with some bbq and mexican cheese on Thursday, and then eggs and cheddar Saturday morning.

Also, everyone should try bbq jackfruit. I put leftovers of it in my quesadilla and I'd challenge anyone to try it and say "this isn't pulled pork!"
